Turkey Burgers

Oven baked, very lean and a million miles away from fast-food [chicken] sandwiches, this is a brilliantly tasty burger. In all honestly, buying a quarter of a turkey was a bit of a purchasing accident at the butchers (the queue was really long, my understanding of weights clearly very limited, the butcher slightly surprised I wanted so much...) - but having lugged home an awfully big piece, we literally ate turkey burgers for half a week and it was the best fun I'd had for ages. These easy to make burgers are genuinely healthy, and honestly delicious. With a brown (or white) roll, a slice of onion or gherkin, and a squeeze of mustard - you're in burger heaven. Try them and never look back.

Ingredients

  • Free Range Turkey (quarter or less)
  • 5 Cloves Garlic
  • Zest of Half a Lemon
  • Salt & Pepper
  • Handful fresh Parsley
  • Pinch Chilli Powder
  • 1 tsp Dijon Mustard
  • Breadcrumbs
  • 2 Free Range Eggs (for dipping)
  • Plain Flour (seasoned)
  • Lemon, for serving

Get your butcher to mince the Turkey.  If the queue at the butchers is very long (!) – whizz it up in a food processor (slightly messy)…

Crush the Garlic cloves (use as much as you dare); finely chop the Parsley and zest half a Lemon.  Mix these three ingredients into the Turkey Mince, and add a teaspoon (or two) of Dijon, a pinch of Chilli Powder and a crunch of Maldon Salt & Black Pepper.  Stir well to mix (or with your hands, which is messy but annoyingly more effective)

Shape the Turkey mix into burger shapes

Dip each one in Plain Flour, then beaten Free Range Egg, then Breadcrumbs

Lay out on a tray / trays lined with greaseproof paper

Brush each with a very tiny amount of Olive Oil

Oven bake for 20 – 25 mins, or until the Turkey Burgers are cooked through

Serve in a roll, with sliced gherkin, some salad and a squeeze of Mustard

Also good served with some Basmati Rice and Chilli Sauce
