Chop the Greens into 1cm slices and wash really thoroughly
Heat some water in a pan and prepare to steam them… you can use a sieve over a pan with a lid on top, or a proper steamer – whatever you prefer
Give the Cabbage maybe 3 minutes – you’re after cooked but not too wilty – you want a little bite and crunch left
Drizzle with 1 or 2 teaspoons of White Wine or Cider Vinegar (decide based on what you are eating – Cider Vinegar is really good with pork… You could also use Lemon)
Also add some Salt, Pepper and a very short drizzle of Extra Virgin Olive Oil (more of a fling than a drizzle)
Toss carefully and serve immediately. Is great with a steaming bowl of hearty stew – or the next day fried with some leftover mash
