Spinach Nuggets

These nuggets of spinach delicious-ness are exactly that - delicious and spinach-ey... and they feature very little fat at all (anchovies are even good for your cholesterol levels). Terribly enjoyable with a wholegrain pilav or a large crunchy salad.

Ingredients

  • 200g Spinach
  • 1 Onion
  • 4 Cloves Garlic
  • 4 Slices White Bread
  • 4 or 5 Anchovies
  • Black Pepper
  • Chilli or Piquante Pepper (optional)

Pour some boiling water over the Spinach in a bowl or a saucepan, and then squeeze the water out with tongs (or your hands once the Spinach is cooler!)

Together with 1 or 2 Cloves of Garlic, 2 slices Bread and a good twist of Black Pepper, whizz the drained Spinach in a food processor

Add Spinach mix to a large bowl

Finely chop and fry an Onion for 5 or 10 minutes on a low heat.  Add a couple of crushed Cloves Garlic and the Anchovies, and keep stirring over a low heat until the Anchovies start to melt

Add the Onion mixture to the Spinach in the bowl

Mix really well – if you like, you can add some chopped fresh Red Chilli or Piquante Peppers (finely chopped).  If the mixture is too wet – add some extra Breadcrumbs

Divide the mixture up into balls (or nuggets?!!) and gently roll them in Breadcrumbs

Lay each one on a baking tray lined with greaseproof paper

Cook at 180˚c for 30 – 40 minutes or until golden and hot all the way through

Delicious served with a 0% Fat Natural Yoghurt dip with some Lemon Juice, Lemon Zest, crushed Garlic and Black Pepper.  Also some rice or some salad
