Sliced Tomatoes

Tomatoes are a brilliant thing, delicious and zero cholesterol rated. Simply sliced, they go with all sorts of dishes - from pasta and risotto through to tagines and stews. With some chopped red, spring or white onions and a sprinkle of fresh or dried herbs - any kind of tomato, sliced, chopped or even squashed, can become the best accompaniment ever...

Great Tomato Combinations

  • Tomato & Basil
  • Tomato & Mint
  • Tomato & Parsley
  • Tomato & Dill
  • Tomato & Oregano
  • Tomato & Onion
  • Tomato & Beans
  • Tomato & Egg

Sliced (or chopped) Tomatoes alone are pretty good…

- With fresh Herbs and Onion is a great combination

- With Basil – Balsamic Vinegar or Lemon Juice would work well as a dressing – Capers would be delicious as an addition

- With Dill, Parsley or Mint – Lemon Juice, Sherry or White or Red Wine Vinegars would all work well – possibly with some chopped Cornichons or Marinated Peppers

- With Coriander – Lemon or Lime Juice would be delicious – also some chopped Preserved  Lemon (Rind only)

With all these options – a good drizzle of Olive Oil or Rape Seed Oil would be the perfect finish to a legendary side dish in its own right…
