Parsley & Piquante Pepper Salad

This Parsley & Pepper Salad is a terrific dish that goes well with Spanish, Italian or slightly Middle Eastern recipes... In the interests of lowering cholesterol and getting healthy, adding spinach definitely adds some extra nutritional value to this salad - but any salad leaves will taste good. The piquante peppers give this side dish something a little hot, sweet and spicy - a perfect match for risottos, or pasta, or pizza; also with grilled meats and pilav.

Ingredients

  • Lettuce Leaves
  • Spinach (optional)
  • Parsley
  • Piquante Peppers
  • Red Peppers (optional)
  • Lemon or Lime

Wash your Salad, Spinach and Parsley

Drain and finely slice 5 or 6 Piquante Peppers (Mild or Hot ones!)

If you use Red Peppers too – slice these lengthways

Lay out your Lettuce Leaves (whole) and cover with chopped Spinach, Parsley and Peppers

Drizzle with Lime or Lemon Juice and Extra Virgin Olive Oil… (a dash of Red Wine Vinegar would do if you don’t have any citrus fruit)
