Courgette Fritters

Fritters are a generally brilliant invention - they are great hot, sometimes even nicer cold - they go really well with a good chilli sauce - and with Greek yoghurt they are truly delicious. These courgette fritters are perfect now that the courgettes in the garden are finally enjoying the fruits of all this rain!

Ingredients

  • 3 Medium Courgettes
  • 1 Red Onion
  • 1 Clove Garlic
  • 1 Free Range Egg
  • 1 Tbsp Plain Flour
  • Fresh Herbs

Grate the Courgettes and finely slice the Red Onion

Chop your Herbs – use whatever you fancy – mint is good, or coriander or dill, chervil or chives… even parsley!

Mix together in a large bowl with a crushed Clove Garlic; some Salt & Pepper; your chopped Herbs

Add the Free Range Egg (beaten) and give it all a good mix before adding and stirring in the tablespoon of Plain Flour

Heat a frying pan with some Olive Oil (I do this with 2 frying pans – it takes less time but you need to keep an eye on them!)

Fry the fritters (three, four or five fritters to a pan – medium sized spoonfuls dolloped gently into the pan!) for 3 to 5 minutes on each side or until golden brown

Once done – put the fritters on a plate with some kitchen roll to drain off any excess oil

You can serve immediately or re-heat to serve… They are just as good cold!  These were really good with a garden salad and a dollop of 0% Greek Yoghurt with some chopped coriander…  They are also excellent with rice and some chilli sauce
