70s Ranch Dressing

A much healthier version of the American classic. This low fat Ranch Dressing is brilliant with anything BBQ-esque, with chicken goujons or nuggets, or with Mexican style wraps... perhaps most simply with a baked potato and some crunchy green salad? I'd guess this is a lot lower in cholesterol than anything you can buy in a jar, but you would definitely never guess, it tastes so good!

Ingredients

  • 150g 0% Greek Yoghurt
  • 2 Cold Piedmont Peppers
  • 1 tsp Smoked Paprika
  • 1 large tsp Red Wine Vinegar
  • Black Pepper
  • Fresh Red Chilli

The cold Piedmont Peppers are really the secret to this recipe – they are super easy to make, but are definitely best cold for this recipe. Delia’s Pepper recipe is good – or a more garlicky version works too!

If you don’t have any, you could use Red Peppers from a jar – and a couple of Piquante Peppers – also from a jar.   You want something sweet to add to the creaminess of the Yoghurt

Whichever you use – whizz up the Peppers in a food processor (you can go smooth or chunky, the choice is yours)

Finely chop the Red Chilli

Mix up all the ingredients in a bowl and taste for seasoning – you could add some extra Smoked Paprika or Vinegar.  A squeeze of Lime would be great too

Good with all sorts of things – wraps, pizzas, baked potatoes or chips, grilled chicken (super 70′s)… whatever you fancy going Ranch, really…
